I prefer to take photographs in manual mode. It allows me more control to shape how I want the photo to look.
Full auto and you're entrusting the camera to take the photo for you.
Shutter priority lets you control the speed of the shutter, so you can introduce blur to the photograph to give the impression of speed or freeze the shot to catch a bird mid flight for instance.
Aperture priority let's you control the depth of field to introduce background blur or to make the whole scene pin sharp.
